Try them……

I try to cook with my girls at least once a week…… sometimes we cook daily  together and sometimes, I am all about getting them out of MY kitchen. This morning, I was feeling willing to deal with the extra hands and  they were in the mood for pancakes and as I looked at the pumpkins from our recent pumpkin patch outing, I thought……. hmmmmm…… pumpkin pancakes. So I went to my favorite cookbook…..GOOGLE, and typed in “pumpkin pancakes bisquick” (I tried just “pumpkin pancakes” at first and there was entirely too much work involved with the “from scratch” recipes) and ta-da Cooks.com came to my rescue again. This recipe was quick,easy and oh so yummy!!!! and fortunately I had all the ingredients on hand. I did cut the brown sugar by 1/2 and put a squirt of Karo syrup instead of a “large spoon”. These truly were like pumpkin pie. My girls gobbled them up (3 each) and I (who am not normally a breakfast gal) at 2 myself. Yummmm…… they really are very good and don’t really need syrup. I just put a little bit of butter and powdered sugar on mine and they were delightful, so delightful that I thought I would share the recipe.

PUMPKIN PIE PANCAKES


2 c. biscuit mix (I use Bisquick)
1 c. cooked pumpkin
1 egg
1 c. milk - if mix is too thick, add more
1/2 c. brown sugar ( I only put a 1/4 cup)
1 lg. spoon Karo syrup (I just squirted a little bit from the jar)
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. salt

Mix all together. Makes 16 cakes.

How did people cook without the internet years ago?I find it amazing that I can type  ingredients into GOOGLE and in seconds pretty much am guaranteed a recipe with those exact things. FANTASTIC!!!!!

So if you get a chance this fall, make these pancakes, maybe with a nice cup of coffee on the side and a dollop of fresh whipped cream to top them off. Perfect!
